Friendsgiving

Happy Thanksgiving week ya’ll!

My two best friends and I decided that we could no longer miss friendsgiving. Between work, kids and all kinds of other life stuff, we resorted to a winter brunch the past couple years. But…nothing is quite like Friendsgiving.

I was in charge of a dessert and cheese platter. If you know me, I take my cheese platters quite seriously. This platter I even made a ‘center piece’ to make it even more fall-ish and festive. For dessert I made a Snicker doodle apple crisp…TO DIE FOR.  Below you will find the recipes and how-to’s. Enjoy!

My cheese platter rules: at least 4 cheeses, 3 different crackers or breads, and/or olives. I ended up running out of room for the olives (will be added to my Thanksgiving platter). I also like to include a couple meats, whether it is prosciutto or salami or whatever your little heart desires!

Now on to the dessert…

What you need: 6 granny smith apples, 1/2 cup of orange juice, 1/2 cup of sugar, one pack of snicker doodle cookie mix, 3/4 cup of old fashioned oats, cinnamon, and one stick of butter.

Preheat oven to 350. Peel and cut apples then layer into 8 x 8 pan. Evenly sprinkle the apples with sugar and sprinkle lightly the cinnamon on top of the sugar. In separate bowl mix cookie mix and oats. Spread evenly onto apples and then cover in butter. Make sure the butter covers the mix so no dry mix is showing. Bake for 60 minutes and serve with ice cream!

I promise I will update with a photo of the apple crisp, I failed and completely forgot to take one. But I promise i will be making this again this week. 🙂

Hope you all have a happy Sunday Evening!
