Kicking Off A Healthy September

Happy September y’all!

I can’t believe it is already September. I may be bias, since it’s my birthday month but isn’t September just the best! Actually, it is probably my 2nd favorite month behind October if I am honest. šŸ™‚ I am very excited for this month!

My birthday is tomorrow & I leave for Georgia on Saturday. I actually have decided to vacation in Charleston before heading to Georgia where I will be working from home, and using weekends to explore!

But I wanted to kick off September (& try to use up all the veggies in my fridge) by making a yummy soup and keeping a healthy diet this week as I know my upcoming road trip and vacation meals may not be the healthiest things. I mean what’s a road trip without snacks & candy!?!

I made this butternut squash soup yesterday for dinner for the week and have been having a variety of cucumber salads for lunch. Breakfast has been all over the place…either eggs or my favorite type of pancakes (my post with full recipe here)

Multitasking with work, cooking and coffee time

Here is an example of a day of eating for me:

Breakfast: Black beans, Tomatoes, onions and eggs. This recipe is super simple! Throw onions on oiled (I use coconut oil spray) let cook for 3 minutes and then add a 1/2 cup of the black beans and a 1/2 cup of tomatoes. I usually sprinkle in some taco seasoning, but I was out so I just added a pinch of Adobe seasoning. Heat these up for 2/3 minutes and then make little spaces for your eggs. Crack the eggs in and then cover for about 5 minutes so eggs cook! And bam…dunzo!

For Lunch: Cucumber salad in several different ways. I always include cucumbers, tomatoes and onion. I will switch up what else is in the salad with the following: black olives, green olives, black beans, avocado, blue cheese. If I didn’t incorporate an egg in breakfast, I will also throw in a boiled egg.

 

For workouts and keeping active:

I finally got back to running y’all! I have been trying to get a couple miles in a day if it is nice out.

I also started Centr 6 phase 2! It is so hard, but feels so good! I am a huge fan of Centr, I love (hate) every workout. Hate them because they are hard, but love them cause it feels great completing and my body feels much stronger since starting the original Centr 6. I also enjoy some the coached workouts, and the extras…ahem…Chris Hemsworth does the newest one and it is the best 18 minute bonus workout”

I am hoping to get one more post up before hitting the road, but I also will be posting throughout my trip and time in Georgia! Hope you all are off to a happy, healthy September!
