Fiesta For One – Quick & Easy Recipes for Cinco De Mayo at Home.

Happy almost Cinco de Mayo…and May the 4th be with you! I’m allowed to say that now right?!?! You know since I watched the Mandalorian. 😉 I hope you all had great weekends and kicked the week off well! The weather was beautiful here, so I spent most my time outside and then overeating my way through a few quick and easy Cinco de Mayo recipes that I wanted to share with ya’ll!

Tomorrow, I’m looking forward to some yummy leftovers & exploring Mexico City thanks to Kayak! If you haven’t checked out their virtual vacations they have released during quarantine, you can here! It’s pretty neat!

And now (drum roll please) the food!

White Bean Tacos:

What you need: 

1 can of white beans
Cilantro
Salsa of your choice
Red onion
Corn tortillas
Jalapeno
Olive Oil

What to do: 

Heat olive oil in a pan, saute the onions and jalapenos to your liking, add in rinsed & drained white beans and salsa. Combine together and let simmer until beans are heated. Then serve and top with your favorite taco toppings! This recipe is so fast and easy. You can use any amount of onion and jalapeno. I also grilled the corn tortillas of the open flame to get a little crunch. You can substitute the white beans for black beans as well.

Taco Bowl:

What you need: 

Ground meat of your choice, I rotate between ground turkey & chicken. For this recipe I used turkey.

Shredded Cheese (Fiesta blend is what I used)

Brown rice

Salsa

Jalapenos

Low sodium taco seasoning

Cook meat until fully cooked and brown, and drain. Place back in pan and season with taco seasoning packet per directions on the packet. In a separate pot, boil water for rice. I just use the 10 minute rice in the little baggies because I am all about the easy. 😉 Once rice is fully cooked, I add it to the taco meat to give the rice some flavor. I added some cheese and topped with some diced jalapenos. Of course, you may add whatever your heart desires.

Enchilada Bake (Weight Watchers recipe): 

I wanted something easy that I could just throw in the oven and then enjoy outside with some of my new favorite mineral water Topo Chico! Which is quite perfect as it is from Monterrey, Mexico!

You can find the recipe I used here. I did skip out on adding taco seasoning to the refried beans. I instead bought a spicy version of the refried beans.

I also like to jazz up my Topo Chico sometimes by using frozen fruit for ice cubes! Quick little addition to your cup to make your drink tasty & pretty.

I just ate dinner and now after this post, I’m hungry again! HA! I hope you all enjoy, and it provides a little inspo for some easy Cinco De Mayo dishes at home!
