A Wednesday What I Eat In A Day

Happy Wednesday!

Ya’ll it is day 13 of me working from home and day I don’t know of social distancing and my WFH outfits are still wildly fashionable. 😉 Any one else changing into their pjs, to workout clothes, to night time pjs?

Daytime PJs

I wanted to hop on and share what I eat in a day (all super easy). It’s been hard to not snack on everything in site being home, I see it I eat it. Yikes! I also want to support local business by getting take out, especially if it means helping someone stay in business & employees keep their jobs. This day of eating didn’t include take out, but I plan on getting some this weekend.

A day of eating:

Breakfast: Peanut butter and jelly sandwich shake with a twist (of spinach)


  • 1 cup of strawberries (I do either fresh or frozen)
  • one frozen banana
  • a handful of spinach
  • 1/2 tablespoon of peanut butter
  • 6 ounces of plain non-fat greek yougurt
  • half a cup of cold water

Throw all the ingredients in a blender and bam…brekkie!


Lunch: Yogurt Bowl

  • One apple, sliced
  • 1/2 cup of fiber one cereal
  • tablespoon of peanut butter
  • 4 ounces of greek yogurt
  • cinnamon

Just assemble the ingredients in a bowl and you are good to go.

Dinner:  Chicken and veggies

I had this nicely plated for ya’ll but never took the photo, dare I say Quarantine Brain? 😉
  • chicken breasts
  • bag of any mixed veggies
  • seasoning of your choice…I used spicy Montreal steak seasoning on this batch, I’m a fan of steak seasonings on poultry.

I preheated the over to 450, and then seasoned the chicken. I baked the chicken for 30 mins and then dumped the bag of frozen veggies on the tray. I sprinkled some olive oil, sat and pepper on the veggies and placed tray back in oven for another 10 minutes. It turned out delish, and will last a couple meals with the amount I made. I actually added some chickpea pasta as a side but forgot to take a picture (whoopsies)! You could add more veggies or rice to bulk up the leftovers as well.


Before saying good night, I want to say that I hope you are still doing all well and staying positive! If you are struggling, cause I know many are, please know I’m praying for you. Remember we may be stuck inside but our minds, hearts and souls are not.
