Kicking off August with a Nephew Filled Weekend.

Hey everyone, happy Tuesday!!

I hope everyone is enjoying this week so far! This week is my co-workers last week, so I have been preparing for being the team of 1! YIKES (haha)! I am so thankful I was able to spend Saturday- Monday with my sweet pea nephews. It was so eventful and fun (I’d be lying if I didn’t say a bit exhausting haha).

I wanted to share a little recap in photos of our weekend! Also sharing photos of the kids dessert and the trifle cake I made for a cookout, recipes included! Also, if you’re in need of some inspiration or motivation today, scroll to the bottom of the post. 🙂

Beach Vibes:  The highlight of our day was collecting tons of shells and burying the littlest!

Saturday Pool Party Vibes:

I put together two desserts a trifle and jello dessert, that were quite simple. The jell-o cups for kiddos, was time consuming but was a hit.

Blueberry Lemon Trifle Recipe: Click Here!

Jell-o cups: (makes 12 cups)

4 packs of blue jello

2-3 packs of mini Swedish fish (i chose the tropical variety)

1 pack of gummy sharks

Follow the instructions on the jello packet. I made one packet at a time when needed. To give the look of the fish swimming I layered the jello. I poured a small amount of the jello in the cups and refrigerated for 45 mins. I placed fish in the jello (not totally stiff, but sturdy enough to hold the fish. And added some more liquid jello. Placed in the fridge and repeated the first steps to create the look of fish swimming in the jello. After adding the last layer of fish and jello, refrigerated over night and added the sharks to the top before leaving for the party!

And lastly what is a Coffee with Coco post without a good ole’ quote?!?!

Keep on smilin’ everyone and serve everything with a side of kindness 🙂
