Good Morning and Happy Saturday!
One of my favorite things to do on weekends is to eat a good meal in the morning. Whether it is out at brunch with friends or in the comfort of my own home, I love a good morning meal!
I think one thing that I struggle with is not consuming twelve thousand calories on some pancakes or waffles when I am wanting to go with something other than scrambled eggs and turkey bacon/sausage. I finally decided to give the ole’ 3 ingredient pancakes and I was pleasantly surprised. I will be honest I have heard about these forever on several different sites, but never thought I’d like them or I would somehow mess them up ha-ha.
Well, they have recently become my favorite and they are so easy! I think you all will enjoy them!
What you need:
- 1/4 cup of rolled oats
- 2 eggs
- 1 banana
What to do:
Blend the oats up in a blender/NutriBullet, they will form a consistency like flour. Add the banana and the eggs and blend again. It will form a liquid mixture much like a normal pancake batter. Scoop out the batter in any size you would like and pour into greased heated pan. I just used a 1/3 cup to get the better out and poured my desired amounts to make small pancakes. Top with whatever flavoring you would like! I have been using syrups, but any flavor nut butter will work as well!
