A weekend full of Butternut Squash & Bracelets

Happy Sunday Everyone, I hope you all are enjoying your weekend! Today is Day 3 of 8 in my little super healthy kick start and boy, I am feeling good!

I decided to do this because I had just eaten my way through February and mostly because it is a part of my mini goals I’ve been talking about: creating healthy habits that will bring me closer to long term goals and plans I have.

I’ve worked both days this weekend, so I decided that getting up a bit earlier and working out or journaling would also be beneficial and helpful and getting together a good morning routine. I’m discovering time is key! Yesterday, I was able to get in a great workout and this morning, mindful journaling!

I wanted to share with you the soup the detox soup I have been living off of and while continue to do so for the next few days. The recipe comes from Molly Sims, you can find it here.

 

What you need/What I used:

  • 2 cups of cubed butternut squash
  • Salt and pepper (if desired, I skipped the salt)
  • Half an onion
  • 1 peeled carrot, chopped
  • 1 chopped stick, chopped
  • 5 cups fat-free chicken broth
  • 2 garlic cloves, cut into quarters
  • 4 sage leaves
  • 1/2 cup Almond milk

Peel the squash and remove the seeds. Cut into cubes. In a large pot, combine all your ingredients minus the almond milk. Bring to a boil. Once at a boil, reduce heat and cover. Simmer for about 40/45 minutes. Remove the sage and using a blender, add almond milk and puree. I only have a nutribullet so I let the ingredients cool before blending.

I serve with a salad that consists of mixed leaves massaged with olive oil, pepper, banana peppers, kalamata olives, and onion. However, mixing up the veggies or seasoning is an option!
