I love cooking and baking. Love it! But I am often eating the same old, same old. Chicken and rice and Brussel sprouts. (same old, same old) I usually meal prep and then eat out of plastic container while watching tv or get sick of whatever it is I meal prepped and pick up something on my way home that is not healthy and not part of my saving money plan.
I never really though much of making myself dinner, well because it’s just me. However, I’ve decided that I should make dinner for myself and add it to my daily schedule at least 3 times a week.
This week, I wanted to start off with my favorite ( my own pea-less version of chicken carbonara), which also may I add doubles as a good ole at home Valentine’s Day recipe for date night 😊.
What you need:
- Pasta of choice, this time I used a thin Fettucine
- 2 eggs
- Shredded parmesan cheese (as much as you like)
- Chicken breast, chopped
- 3 strips of bacon (turkey or regular)
To Do:
Bring 4 quarts of water to a boil and add pasta. Let pasta cook. In a skillet, cook bacon and set aside. In same skillet, add chicken (cut into squares) and let cook. In small bowl, whisk eggs and parmesan cheese together. Once pasta is cooked, drain but keep water that it boiled in. Brown chicken and add bacon and pasta to skillet. On low heat, pour egg and cheese mixture in and add leftover pasta water. Stir and wait to get the consistency you desire. Serve warm!
