A Foodie Fourth Day of Christmas

Tis’ the season…

to eat, eat, eat!

I struggle with not wanting to eat 12 million calories and brunching hard with my girlfriends. However, I think I found a happy medium with the breakfast dish below. Its very easy to make and you won’t feel guilty after eating almost all of it 😉

Sweet Potato Hash

What you need: 

2 sweet potatoes cut into squares

A pepper (green, red, yellow or all will work)

1 and a half cup of turkey sausage

Sliced up Onion (about half of one)

2 eggs

Cheese (if your heart desires)

What to do:

Heat 2 tablespoons of olive oil into skillet. And preheat oven to 350. Add sweet potatoes to pan and let cook for 2 minutes.  Add 1 cup of water and cover, letting cook for about 6 minutes. Add in peppers, onions and turkey sausage. Let sit over burner for 3 minutes, while stirring quite frequently.  Make a little divet in hash, and cracked open egg, letting it sit nicely in hash. Pop in oven and bake between 15-20 minutes depending on how runny you want the eggs. And now Enjoy (and sprinkle some cheese on there if you wanna get wild ;))
