So, I’ve spent the past two weeks barely eating after the accident I was in. I finally on Thursday started eating solid food and not just drinking smoothies or living off Halo Ice Cream. Finally getting to eat real food again has me pumped to start cooking and baking! I also though what a good time for a recipe.
This Mango salsa recipe I whipped together pre-tongue/face injury (lol). I had a lot of fruit and veggies left over from a platter I had made so i decided to make some mango salsa. Perfect for chips, crackers, salads and chicken.
I could live off this stuff!!!
What you need:
- Red pepper
- Purple onion
What you do:
Dice everything but the lime and lemon, toss the ingredients together. Squeeze lime and lemon over the mix. Then toss again, refrigerate and serve! I would recommend refrigerating a couple hours before serving so the flavors are mixed well.
