Put That Diet On Hold, It’s Pizza Time

It’s grilling season baby!

Break out the chickens, steaks, burgers and…pizzas.

One of my absolute favorite thing to grill is pizza, it gives you a little feel of coal fired pizza. Below is a delish raspberry chipotle BBQ chicken pizza I threw together. I was in need of some comfort food this week & what is better than pizza?!?

This recipe is easy and quick, something you can whip together after a long day of work.

Pair with a good ole glass of wine, some cozy socks and you are good to go.

What you need:

  • Chicken
  • Sweet Baby Ray’s Raspberry Chipotle BBQ Sauce
  • Onions
  • Wheat pizza dough
  • Olive Oil
  • Whatever else your little heart desires on a pizza

Grill chicken, once done, cut into several pieces. Roll your dough out using flour. I’m not a stickler for a perfect round pizza, as you can probably tell. Once rolled sprinkle with olive oil and place on grill. I would say 5-7 minutes on each side is good, I usually keep a close eye on it in order to prevent it from burning. Once flipped, place all your ingredients on. Close cover and wait about 5-7 minutes (or until cheese is melted). And boom…dinner is dunzo.
